About the Role
A confidential Miami-based dessert manufacturer is seeking an experienced Production Manager with a background in bakery, pastry, or industrial dessert manufacturing. This leader will oversee daily operations, manage a small team, maintain recipes and yields, and ensure consistent quality and food safety.

Key Responsibilities
Lead daily production for refrigerated and frozen dessert lines.
Supervise, train, and support a team of 2 production employees.
Maintain and standardize recipes, formulations, batch sheets, and yields.
Oversee scaling, mixing, assembly, dosing, and packaging processes.
Ensure full compliance with FDA, DOA, GMP, HACCP standards.
Coordinate with sanitation staff to maintain facility cleanliness.
Manage inventory of raw materials, packaging, and finished goods.
Implement process improvements to increase efficiency and reduce waste.
Track and report production metrics, including throughput, cycle time, yields, and quality.
Requirements
3+ years of experience in bakery, pastry, or dessert manufacturing.
Industrial production experience (not restaurant-only).
Strong knowledge of batching, scaling, yields, and quality control.
Experience with FDA, DOA, GMP, HACCP compliance.
Ability to lead small teams with discipline, clarity, and organization.
Reliable, hands-on, and comfortable working in a fast-growing startup environment.
